Lumpia: how to cook them

Lumpias are a philippines specialty of Chinese origin.
As with spring rolls, meat and / or vegetables are wrapped in an omelette or a roll of dough.
One distinguishes "fresh" Lumpias of "fried" Lumpias "fried", ie raw Lumpias and Lumpias fried in oil.

PASTA.
To make rolls of pasta, you can do yourself a thin pancake dough or simply buy sheets of rice in the store.

STUFFING INGREDIENTS.
• 2 tablespoon of oil
• 1 onion finely chopped
• 1 crushed garlic
• 300g chicken, finely minced
• 2 carrots cut into julienne
• ½ white cabbage, cut into julienne
• 2 spring onions finely chopped
• 2 spoonful of soy sauce
• 2 spoonful of fish sauce
• Pepper
• 5 lettuce leaves

PREPARATION OF THE FARCE
• Heat 1 tablespoon of oil in a roasting pan or a wok. Add onion and garlic and fry quickly.
• Add chicken and fry, stirring for 2 minutes.
• Remove the chicken from the pan and heat again 1 tablespoon in the pan.
• Cook the vegetables for 2 minutes.
• Add pre-cooked chicken, soy sauce and fish sauce. Add pepper and cook for 1 minute.

Filling ROLLS
• Soften the leaves of rice in cold water and drain on a linen.
• Cut the leaves into 2 and cover the lower half of a leaf rice with half a leaf salad.
• Add 1 to 2 tablespoons of cooled vegetables and chicken.
• Fold the top half of the leaf of rice on the bottom half and roll from the bottom.

Your lumpia is ready !
